Crispy Creole Fish Fry creates a crispy cornmeal base, great for frying your favourite fresh fish.
Pan Fried Eggplant
4 cups oil
1 tsp. Tony Chachere’s Creole Seasoning
1 large whole eggplant (cut into rounds)
1/2 cup milk
2 cups Tony Chachere’s Crispy Creole Fish Fry
In a large skillet, place 4 cups of vegetable oil. Turn on medium-high until temp reaches 350°. Breading Procedure: Pat dry eggplant. In a medium-sized bowl, mix together eggs, milk and Tony Chachere’s Creole Seasoning. Dredge eggplant into egg mixture, then into Tony Chachere’s Creole Fish Fry. Drop eggplant one at a time into 350° oil. Fry for 3 minutes or until golden brown, flipping the eggplant once during cooking. Carefully remove the eggplant from the skillet. Drain on paper towels. Serve immediately.
